Nothing can beat ‘Ghar ka khana’ made by our mom. While we cannot perhaps replicate the taste of mom’s dishes, we can at least try to surprise her with our culinary skills! Trust me; your mom will be so proud to see you cook!
This Mother’s Day (8th May 2022), give your mom a break from cooking and take charge of the kitchen yourself! You are not a pro cook? Fret not! Try the following simple and easy recipes for Mother’s Day and take your mom on a gastronomically delighting food trip!
No worries, she will gladly help you clean the kitchen mess after tasting your food!
1. Fluffy Pancakes for breakfast
We understand that waking up before your mom in the morning and making her breakfast is challenging! However, you can do it at least for a day.
Waking up to a fancy breakfast will be the best start to a Mother’s Day for your mom. You can choose to make some filling pancakes for breakfast.
➢ Ingredients:
- Maida or plain flour – 2 cups
- Sugar – 2 tbsp
- Baking powder – 1 tbsp
- Baking soda – ½ tbsp
- Salt as per taste
- Butter (melted) – 2 tbsp
- Milk – 1 cup
- Vanilla or strawberry essence – 1 tbsp (optional)
➢ Cooking Process:
Take the dry ingredients first into a mixing bowl and mix them well. Now add butter, milk, and the essence and whisk to make a smooth batter. There should be no lumps, and the better will be in flowing consistency. Heat a non-stick pan, pour a ladle of the batter, let it cook for 2 to 3 minutes, and flip until golden brown.
Make a stack of the pancakes, place a cube of butter on top, pour some honey on top and serve them hot with a cup of coffee, tea or juice, whichever your mom likes.
2. Kashmiri Dum Aloo
We all love potatoes. If you do not know what to make for lunch for your mother, this recipe for Mother’s Day can never go wrong. Moreover, it is super easy to make!
➢ Ingredients:
- Baby potatoes – 1 kg
- Cumin – 1 1/2 tsp
- Cloves – 4
- Fennel – 1 tsp
- Cardamom – 4
- Mace – 1 piece
- Coriander seeds – 1 tbsp
- Pepper 1/2 tsp
- Cinnamon – 1 piece
- Red Chilies – 15
- Red chili powder 1 tsp
- Curd – 400 gms
- Dry ginger powder 1/2 tsp
- Kasuri Methi
- Salt
- Oil
➢ Cooking process:
Pour water into a deep pan and add salt to it. Add the potatoes and boil them. Peel the potatoes and prick them with a toothpick. In a bowl, rub the peeled potatoes with salt and chilli powder.
Take a frying pan, fry the potatoes until they turn golden brown, and keep them aside. Now dry roast the whole spices, let them cool down and grind them to a fine powder. De-seed the red chillies and soak them in hot water and grind them to a fine paste.
Whisk curd with dry ginger powder and the ground masala powder. Heat some oil, add red chilli powder, turmeric powder, and asafoetida, and stir well. Then, add the whisked curd mixture and bring it to a boil. Add fried potatoes and close cook. Once the potatoes are tender, add Kasuri methi and turn off the stove,
Serve it hot with rice, naan or roti and some salads and pickles on the side!
3. Chocolate Cupcakes
➢ Ingredients:
- Wheat flour – 1 cup
- Cocoa powder – 3/4th cup
- Brown sugar – 4 tbsp
- Baking powder – 2 tbsp
- Buttermilk – 1 cup
- Cinnamon powder – tbsp
- Vanilla essence – 1 tbsp
- Vegetable oil – 1 cup
- 1 egg
➢ Baking process:
Take a large mixing bowl and mix the dry ingredients first. In another bowl, pour the egg, buttermilk, oil and vanilla essence and whisk to make a silky batter. Keep pouring the wet mixture to dry ingredients and mix in the cut and fold method. Add lots of chocolate chips and give it a mix.
Pour the batter into cupcake moulds and bake the cakes for 20 to 25 minutes at 200 degrees in a pre-heated oven.
You can also add chocolate icing on the top once the cupcakes are cooled. Your mom will love this sweet ending to the day.
